An Ancient Technique of Bread Baking when yeast was not even known to humans. Someone in the middle east proofed her bread by accident, forgetting it in the dough container for few days, And the wild yeasts feasted on the dough and proofed it. The lady went ahead and baked the puffed-up dough as trashing food was not a trend 2000 years ago. She was amazed by the bake being so much more delicious with a tangy flavour and aroma; that's how wild yeast was discovered.
Now, several thousand years later, we at LO'cal decided to work on this bread, fascinated by its health benefits, we made our starter with just flour and water and baked bread after bread until we achieved the most perfect and well-fermented Bread without using any commercial yeast. The only deviation we made in the recipe was adding a little olive oil to make the crumb a bit softer, making it suitable for the Indian Taste Palate. After 3 years of thorough research and development, we can confidently say that we bake the most Authentic Sourdough bread

The list is long, but to keep it short and simple, just compare the list of our ingredients in our Authentic Sourdough bread:
"Sifted Wheat bread Flour," "Water," "Salt," and "Extra Virgin Olive Oil." We won't mention the sourdough starter here as it comprises the same water and flour in all our sourdough bakes. That's the reason we call it the real sourdough bread.
With our unique 3-step long fermentation process at specific cold temperatures, we achieve a fully proofed bread with an Airy well-opened crumb that's very soft and buttery with a very subtle tang and complex deep umami flavour.
Consuming a well fermented fully proofed bread makes it easy to digest and lighter on your gut. And since we don't add any preservatives or extra gluten to the flour you can consume it Guilt free seven days a week.
The Flour Sourced for our Bread is one of the finest species of wheat kernel grown organically by THREE ONE FARMS in Punjab and is freshly stone milled as and when we order.
Lastly for the propaganda on the negative effects of Gluten that we have consumed for ages, it is broken down manifold by the Wild Yeasts. Having said that we would like to add that gluten itself is not necessarily thats hurting your gut, it is the chemicals and other preservatives often added to flour to improve the quality may indeed cause digestive issues when consumed regularly.
